Ingredients:
• 500g frozen pumpkin (cooked and mashed)
• 1 cup cake flour
• 1 tsp baking powder
• 1 egg
• 1 tbsp sugar (optional)
• Pinch of salt
• Oil for frying
Cinnamon Sugar Topping:
• 2 tbsp sugar
• 1 tsp ground cinnamon
Instructions:
1. In a bowl, mix the mashed pumpkin, egg, sugar, and salt.
2. Sift in the flour and baking powder. Mix until smooth.
3. Heat oil in a pan over medium heat.
4. Drop spoonfuls of batter into the oil and fry until golden brown on both sides.
5. Drain on paper towels and sprinkle with cinnamon sugar while warm.
Serving Tip: Serve with a knob of butter or a drizzle of golden syrup for extra indulgence!
